Founded in 2017 with its first shop in Taipei’s Zhongshan district, The Master Xiao-Hun Noodles Restaurant began without celebrity endorsements or flashy marketing. Instead, it relied solely on a spirit of craftsmanship — with precision in ingredient selection and recipe formulation — to create the now-famous Xiao-Hun Dry Noodles series.
Beloved by countless food lovers and influencers, the brand quickly rose to prominence in Taiwan’s food scene.
Today, we operate multiple directly managed stores across Taiwan and continue to expand both locally and internationally.
The unforgettable flavor that keeps customers coming back lies in our iconic Xiao-Hun Chili Oil, a complex blend of dozens of ingredients including star anise, dried citrus peel, spices, vegetables, and premium chili peppers.
Crafted entirely by hand over 8 hours by skilled artisans, only the top 10% of the final oil — the clearest and most fragrant layer — is reserved for use. Its rarity and meticulous preparation have earned it the nickname: “the Hermès of chili oils.”
At The Master, this signature chili oil serves as the foundation of nearly all our products — from dry noodles to braised pork meal kits and even snack items, forming a flavorful and cohesive product line that reflects our dedication to culinary excellence.
The Secret of Xiao-Hun
The Secret of Xiao-Hun Part 1:
8 Hours · 5 Artisanal Steps
The heart of our flavor lies in an 8-hour handcrafted process, where beef tallow is slowly stir-fried with dozens of fresh and dried chili varieties.
Our artisans rely on their hands and senses — constantly checking the aroma and texture throughout each step — making the flavor nearly impossible to replicate.
1. Stir-Fry
Beef tallow is gently stir-fried with a blend of fresh and dried chilies to extract deep aroma and flavor.
2. Simmer
Carefully selected Chinese herbs (free from heavy metals), along with fresh vegetables, are simmered with fermented rice wine and broad bean paste to release layers of sweetness and complexity.
3. Mix
With no added water to prevent dilution, the mixture must be manually stirred every five minutes for 8 hours to fuse the four signature notes — aroma, numbing spice, heat, and depth.
4. Rest
The mixture is left to settle for 12 hours, allowing the oil to naturally separate and mature while locking in the fragrance of herbs and vegetables into the top oil layer.
5. Filter
Only the top less than 10% of the oil — the clearest, richest, and most fragrant portion — is extracted.

Every drop of our chili oil is meticulously refined under the watchful eye of our central kitchen artisans.
From each batch of handcrafted chili sauce, only the top 10% of the oil — the clearest and most aromatic layer — is carefully extracted.
This precious essence becomes the foundation of our premium seasoning, delivering the finest and most unforgettable flavor.

A Symphony of Layers — Flavor and Fragrance in Every Drop
Just a single drop of Xiao-Hun Chili Oil is enough to transform a dish — its depth of aroma and complexity is the key to unlocking unforgettable flavor:
Top Note: The rich fragrance of beef tallow hits first, followed by a sharp burst of heat from small dried chilies and Chao Tian Jiao (facing heaven peppers), igniting the tip of the tongue with a tingling thrill.
Heart Note: A bold wave of aroma rushes through the nose — filled with the deep, earthy notes of cumin and fennel, adding warmth and depth.
Base Note: Finally, Sichuan peppercorns take center stage. Backed by a complex army of over a dozen traditional Chinese herbs, they deliver a powerful, lingering finish — an electrifying finale on the palate.
